Thai Green Curry Chicken

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 500 g chicken thigh fillets, diced
  • 1 tablespoon cooking oil
  • 5 tablespoons asia @ home green curry paste
  • 400 ml coconut milk
  • 3 tablespoons brown sugar
  • fresh coriander, garnish
  • your choice of vegetables capsicum, sliced

Recipe

  • 1 heat 1 tbsp of oil in wok or pan.
  • 2 stirfry chicken with curry paste until the chicken is browned.
  • 3 add the coconut milk and brown sugar.
  • 4 add vegetables (if desired).
  • 5 simmer for 20 minutes or until the vegetables are cooked and the chicken is tender.
  • 6 garnish with fresh coriander then serve with rice.
