Thai Green Curry Chicken

Ingredients

- 500 g chicken thigh fillets, diced
- 1 tablespoon cooking oil
- 5 tablespoons asia @ home green curry paste
- 400 ml coconut milk
- 3 tablespoons brown sugar
- fresh coriander, garnish
- your choice of vegetables capsicum, sliced
Recipe
- 1 heat 1 tbsp of oil in wok or pan.
- 2 stirfry chicken with curry paste until the chicken is browned.
- 3 add the coconut milk and brown sugar.
- 4 add vegetables (if desired).
- 5 simmer for 20 minutes or until the vegetables are cooked and the chicken is tender.
- 6 garnish with fresh coriander then serve with rice.
