The Home Ranch's Honey Pecan Chicken

Ingredients

- 2 tablespoons butter
- 1 tablespoon minced shallot
- 1 cup fresh orange juice
- 1/4 cup bourbon
- 1 cup whipping cream
- 2 tablespoons honey
- 1 tablespoon cider vinegar
- salt and pepper
- 1/4 cup flour
- 1 teaspoon minced fresh thyme
- 1/2 cup finely chopped pecans
- salt and pepper
- 6 boneless skinless chicken breast halves
- olive oil
Recipe
- 1 to make sauce, heat butter in medium saucepan.
- 2 add shallots and cook over low heat 3 minutes or until tender, but not brown.
- 3 add orange juice and bourbon, increase heat and continue cooking until liquid is reduced to 1/2 cup.
- 4 add cream and reduce until slightly thickened.
- 5 add honey, vinegar and season with salt and pepper.
- 6 if sauce is too thin, make a small amount of cornstarch and cold water slurry. add it to sauce to thicken (only if needed).
- 7 to make chicken, mix flour, thyme, pecans, salt and pepper. dredge chicken in flour mixture.
- 8 heat small amount of olive oil in a large saute pan.
- 9 add chicken and saute until golden brown.
- 10 pour sauce onto each plate and place chicken breast in center. serve addition sauce separately.
