The Home Ranch's Honey Pecan Chicken

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 2 tablespoons butter
  • 1 tablespoon minced shallot
  • 1 cup fresh orange juice
  • 1/4 cup bourbon
  • 1 cup whipping cream
  • 2 tablespoons honey
  • 1 tablespoon cider vinegar
  • salt and pepper
  • 1/4 cup flour
  • 1 teaspoon minced fresh thyme
  • 1/2 cup finely chopped pecans
  • salt and pepper
  • 6 boneless skinless chicken breast halves
  • olive oil

Recipe

  • 1 to make sauce, heat butter in medium saucepan.
  • 2 add shallots and cook over low heat 3 minutes or until tender, but not brown.
  • 3 add orange juice and bourbon, increase heat and continue cooking until liquid is reduced to 1/2 cup.
  • 4 add cream and reduce until slightly thickened.
  • 5 add honey, vinegar and season with salt and pepper.
  • 6 if sauce is too thin, make a small amount of cornstarch and cold water slurry. add it to sauce to thicken (only if needed).
  • 7 to make chicken, mix flour, thyme, pecans, salt and pepper. dredge chicken in flour mixture.
  • 8 heat small amount of olive oil in a large saute pan.
  • 9 add chicken and saute until golden brown.
  • 10 pour sauce onto each plate and place chicken breast in center. serve addition sauce separately.
