Twice Baked Potato Casserole

Ingredients

- 10 medium sized potatoes
- 1/2 cup butter
- 1/4 cup chicken broth
- milk
- 1 1/2 cups gruyere cheese
- 6 -7 garlic cloves
- 1 teaspoon olive oil
- salt and pepper
- butter, for dotting on top
Recipe
- 1 bake potatoes until knife inserted meets with no resistance.
- 2 roast garlic with olive oil until soft.
- 3 scoop potatoes out of skins into bowl. add 1 stick butter, chicken broth and milk. mash then use a hand mixer to beat smooth. add garlic and about 1 cup of the cheese. season with salt and pepper.
- 4 pour into greased casserole dish.
- 5 top with remaining cheese and dot with butter.
- 6 bake about 45 minutes at 350 degrees.
