Twice Baked Potato Casserole

Total Time: 4 hrs Preparation Time: 2 hrs 15 mins Cook Time: 1 hr 45 mins

Ingredients

  • Servings: 6
  • 10 medium sized potatoes
  • 1/2 cup butter
  • 1/4 cup chicken broth
  • milk
  • 1 1/2 cups gruyere cheese
  • 6 -7 garlic cloves
  • 1 teaspoon olive oil
  • salt and pepper
  • butter, for dotting on top

Recipe

  • 1 bake potatoes until knife inserted meets with no resistance.
  • 2 roast garlic with olive oil until soft.
  • 3 scoop potatoes out of skins into bowl. add 1 stick butter, chicken broth and milk. mash then use a hand mixer to beat smooth. add garlic and about 1 cup of the cheese. season with salt and pepper.
  • 4 pour into greased casserole dish.
  • 5 top with remaining cheese and dot with butter.
  • 6 bake about 45 minutes at 350 degrees.
