Spicy Bean Nacho Pie

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1 tablespoon olive oil
  • 1 onion, cut into wedges
  • 1 garlic clove, crushed
  • 1 teaspoon ground coriander
  • 2 tablespoons fresh coriander, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili, dried and crushed
  • 1 teaspoon sugar
  • 1 (400 g) can whole canned tomatoes
  • 1 chicken stock cubes or 1 vegetable stock cube
  • 2 (300 g) cans beans, drained
  • 60 g tortilla chips
  • 3/4 cup cheddar cheese, grated
  • 1/4 teaspoon salt and black pepper
  • 2 tablespoons sour cream

Recipe

  • 1 heat oil in a frying pan. fry onion for 5 minutes. stir in garlic, ground and fresh coriander, cumin, chillies, sugar and tomatoes. crumble in stock cube.
  • 2 stir in beans and simmer for 10 minutes.
  • 3 preheat grill to high.
  • 4 transfer mixture to an ovenproof dish. scatter with tortilla chips and cheese. season to taste with salt and pepper.
  • 5 grill until cheese melts.
  • 6 serve with sour cream.
