Tangy Chicken Couscous Salad

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 10 ounces couscous
  • 6 tablespoons worcestershire sauce
  • 1 zucchini, finely diced
  • 1 red pepper, cored and finely diced
  • 4 scallions, finely chopped
  • 5 ounces dried apricots, finely diced (optional)
  • 2 tomatoes, finely chopped
  • 4 chicken breasts, cooked and cut into strips

Recipe

  • 1 place the couscous in a large bowl and pour over the worcestershire sauce.
  • 2 add 1 1/4 cups of boiling water from the kettle, mix well, then add the remaining ingredients except the chicken.
  • 3 cover the mixture and leave in a cool place for at least 15 minutes.
  • 4 stir in the cooked chicken and serve.
