Tangy Chicken Couscous Salad

Ingredients
- Servings: 4
- 10 ounces couscous
- 6 tablespoons worcestershire sauce
- 1 zucchini, finely diced
- 1 red pepper, cored and finely diced
- 4 scallions, finely chopped
- 5 ounces dried apricots, finely diced (optional)
- 2 tomatoes, finely chopped
- 4 chicken breasts, cooked and cut into strips
Recipe
- 1 place the couscous in a large bowl and pour over the worcestershire sauce.
- 2 add 1 1/4 cups of boiling water from the kettle, mix well, then add the remaining ingredients except the chicken.
- 3 cover the mixture and leave in a cool place for at least 15 minutes.
- 4 stir in the cooked chicken and serve.
