Tortellini & Bacon Meatballs

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 12 ounces ground lamb
  • 4 slices of thick bacon, chopped into little pieces
  • 2 minced garlic cloves
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 19 ounces cheese tortellini
  • 2 small shallots, thinly slices
  • 2 (14 ounce) cans diced fire-roasted tomatoes
  • 2 cups spinach, torn
  • shaved parmesan cheese (optional)
  • 1/2 cup chicken broth

Recipe

  • 1 cook tortellini according to directions, set aside.
  • 2 combine lamb, bacon, garlic & pepper. shape into 1" balls. brown until crisp and set aside.
  • 3 retain all grease for meatballs. cook shallots until tender.
  • 4 add meatballs, tomatoes, broth, tortellini & salt. cook until spinach wilted and well blended.
