Tortellini & Bacon Meatballs

Ingredients
- Servings: 8
- 12 ounces ground lamb
- 4 slices of thick bacon, chopped into little pieces
- 2 minced garlic cloves
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
- 19 ounces cheese tortellini
- 2 small shallots, thinly slices
- 2 (14 ounce) cans diced fire-roasted tomatoes
- 2 cups spinach, torn
- shaved parmesan cheese (optional)
- 1/2 cup chicken broth
Recipe
- 1 cook tortellini according to directions, set aside.
- 2 combine lamb, bacon, garlic & pepper. shape into 1" balls. brown until crisp and set aside.
- 3 retain all grease for meatballs. cook shallots until tender.
- 4 add meatballs, tomatoes, broth, tortellini & salt. cook until spinach wilted and well blended.
