Stir-fried Asparagus And Sesame Seeds (weight Watchers)

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • 1/4 cup chicken broth
  • 1/2 teaspoon reduced sodium soy sauce
  • 1 teaspoon cornstarch
  • 2 teaspoons vegetable oil
  • 1/2 cup scallion, minced
  • 2 teaspoons fresh ginger, minced
  • 1 teaspoon garlic, minced
  • 5 1/2 cups asparagus (cut in 2 inch pieces)
  • 2 teaspoons sesame seeds
  • 2 teaspoons oriental sesame oil

Recipe

  • 1 in a small bowl, blend the chicken broth and soy sauce with the corn starch.
  • 2 in a large non-stick skillet over medium-high heat, warm the oil until hot but not smoking.
  • 3 add the scallions, ginger, and garlic, and stir-fry until fragrant or about 30 seconds.
  • 4 add the asparagus and stir-fry until the asparagus turns bright green, about 1 minute.
  • 5 add the broth mixture and bring to a boil. cook, stirring, until the sauce has thickened.
  • 6 cover and steam over medium-high heat until the asparagus is crisp-tender, 2 to 3 minutes.
  • 7 meanwhile, in a small skillet, stir the sesame seeds over medium heat until toasted (i put mine in the microwave for a minute instead). this will take 2 to 4 minutes on the stove.
  • 8 add the sesame oil to the asparagus and stir-fry for 30 seconds.
  • 9 sprinkle the asparagus with the sesame seeds and serve.
