Salmon Chowder

Ingredients

  • Servings: 6
  • 3 tablespoons coconut oil
  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 2 garlic cloves, minced
  • 1 cup potato, diced
  • 2 cups chicken broth
  • 1 cup carrot, shredded
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 3/4 teaspoon dried dill
  • 1 (14 ounce) can cream-style corn
  • 1 (14 ounce) can coconut milk
  • 1/4 cup half-and-half
  • 2 cups cooked salmon (bones and skin removed)
  • 2 teaspoons hot sauce
  • 2 teaspoons dried thyme

Recipe

  • 1 melt coconut oil over medium heat in a skillet.
  • 2 add next 4 ingredients and saute until just tender.
  • 3 add next 6 ingredients and bring to a boil. reduce heat and simmer for 40 minutes.
  • 4 add the remaining ingredients and simmer for at least 15 minutes.
