Spicy Strawberry-raisin Chicken

Ingredients

  • Servings: 4
  • 1 1/4 cups unsweetened pineapple juice
  • 1/4 cup raisins
  • 1/2 teaspoon crushed red bell pepper
  • 2 cloves smashed garlic
  • 4 (4 ounce) boneless skinless chicken breast halves
  • 1/2 cup low sugar strawberry preserves
  • 1/2 teaspoon cornstarch

Recipe

  • 1 combine first 4 ingredients in large non-aluminum skillet and bring to a boil.
  • 2 add chicken, cover, reduce heat and simmer 10 minute or until chicken is cooked through.
  • 3 remove chicken from skillet and keep warm.
  • 4 bring liquid to boil if not already reduced by 1/2.
  • 5 combine strawberry preserves and cornstarch, stir into liquid and cook 1 minute or until slightly thickened.
  • 6 either put chicken back into skillet to coat with sauce, or serve each breast with roughly 3 tablespoons of sauce -- enjoy!
