Spicy Thai Chicken Legs

Ingredients

  • Servings: 4
  • 1 cup plain low-fat yogurt
  • 2 tablespoons lime juice
  • 2 garlic cloves, crushed
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon ground coriander
  • 1/3 teaspoon cayenne
  • 4 chicken legs with thigh, skinned

Recipe

  • 1 in a medium bowl combine yogurt, lime juice, garlic, ginger, coriander and cayenne.
  • 2 pierce chicken legs all over with a fork and place in the bowl. turn to coat and marinate at room temperature, turning occasionally, 30-60 minutes.
  • 3 preheat oven to 350. remove chicken from marinade and place in a shallow baking dish. reserve marinade.
  • 4 bake chicken for 15 minutes. remove from oven.
  • 5 spoon reserved marinade over chicken. bake for 20 minutes longer or cooked through.
