Spicy Yoghurt Chicken

Total Time: 1 hr 50 mins Preparation Time: 1 hr 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 8 -10 chicken drumsticks or 4 chicken breast fillets
  • 1 (200 g) container low-fat yogurt (i use skim)
  • 2 cloves garlic, crushed
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 2 teaspoons cornflour
  • 2 teaspoons brown sugar

Recipe

  • 1 place chicken in shallow dish.
  • 2 mix yoghurt, garlic, cumin, coriander and chilli together and pour over chicken.
  • 3 coat well.
  • 4 cover and leave to marinate in refrigerator for at least 1 hour.
  • 5 remove excess yoghurt mix from chicken.
  • 6 arrange drumsticks on foil line baking tray and bake in moderate oven 200deg c for 35- 40 minutes or until tender and cooked.
  • 7 place remaining yoghurt mix into saucepan.
  • 8 blend in cornflour and sugar.
  • 9 bring to boil, stirring.
  • 10 reduce heat and simmer for 2 minutes.
  • 11 drizzle sauce over chicken.
