Spicy Yoghurt Chicken

Ingredients
- Servings: 4
- 8 -10 chicken drumsticks or 4 chicken breast fillets
- 1 (200 g) container low-fat yogurt (i use skim)
- 2 cloves garlic, crushed
- 1/2 teaspoon cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 2 teaspoons cornflour
- 2 teaspoons brown sugar
Recipe
- 1 place chicken in shallow dish.
- 2 mix yoghurt, garlic, cumin, coriander and chilli together and pour over chicken.
- 3 coat well.
- 4 cover and leave to marinate in refrigerator for at least 1 hour.
- 5 remove excess yoghurt mix from chicken.
- 6 arrange drumsticks on foil line baking tray and bake in moderate oven 200deg c for 35- 40 minutes or until tender and cooked.
- 7 place remaining yoghurt mix into saucepan.
- 8 blend in cornflour and sugar.
- 9 bring to boil, stirring.
- 10 reduce heat and simmer for 2 minutes.
- 11 drizzle sauce over chicken.
