Spiked Orange Chicken Breast

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 16 ounces chicken breasts, boneless and flattened slightly
  • 1/4 cup orange juice, low calorie
  • 3 tablespoons orange marmalade
  • 1/4 cup mandarin orange, canned with juice removed and chopped
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon chili powder
  • salt
  • pepper

Recipe

  • 1 coat a skillet with non-stick cooking spray and bring to medium high heat. season chicken with salt and pepper and add to the hot pan. cook 3-4 minutes until lightly browned. turn chicken and cook for an additional 2-3 minutes.
  • 2 reduce heat to medium low and add all remaining ingredients. cook 3-4 minutes until all ingredients are warmed, thickened, and well incorporated.
  • 3 serve with the orange mixture.
