Spiked Orange Chicken Breast

- 16 ounces chicken breasts, boneless and flattened slightly
- 1/4 cup orange juice, low calorie
- 3 tablespoons orange marmalade
- 1/4 cup mandarin orange, canned with juice removed and chopped
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon chili powder
- salt
- pepper
Recipe
- 1 coat a skillet with non-stick cooking spray and bring to medium high heat. season chicken with salt and pepper and add to the hot pan. cook 3-4 minutes until lightly browned. turn chicken and cook for an additional 2-3 minutes.
- 2 reduce heat to medium low and add all remaining ingredients. cook 3-4 minutes until all ingredients are warmed, thickened, and well incorporated.
- 3 serve with the orange mixture.
