Shortcut Tuna Pot Pie

Ingredients

- 2 tablespoons butter
- 1 small onion, chopped
- 1/2 red bell pepper, chopped
- 1 stalk celery, chopped
- 1/4 cup flour
- 1 cup chicken stock
- 1 cup milk
- 1/2 cup peas
- 1/2 cup corn
- 2 tablespoons chopped parsley
- 1 teaspoon chopped dill
- 1/2 teaspoon mustard powder
- 1 tablespoon lemon juice
- 1 (6 ounce) can tuna, drained and broken up
- 1 (12 ounce) can country biscuit dough
Recipe
- 1 in skillet, melt butter. sauté onion, bell pepper and celery. stir in flour and cook 1 minute. gradually whisk in stock, then milk.
- 2 when mixture comes to a simmer, stir in peas, corn, parsley, dill and mustard. reduce heat and simmer 10 minutes. stir in lemon juice and tuna.
- 3 scrape mixture into a baking dish and lay dough rounds on top. bake at 375 for about 15 minutes. let rest 5 minutes before serving.
