Shortcut Tuna Pot Pie

Ingredients

  • Servings: 9
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1/2 red bell pepper, chopped
  • 1 stalk celery, chopped
  • 1/4 cup flour
  • 1 cup chicken stock
  • 1 cup milk
  • 1/2 cup peas
  • 1/2 cup corn
  • 2 tablespoons chopped parsley
  • 1 teaspoon chopped dill
  • 1/2 teaspoon mustard powder
  • 1 tablespoon lemon juice
  • 1 (6 ounce) can tuna, drained and broken up
  • 1 (12 ounce) can country biscuit dough

Recipe

  • 1 in skillet, melt butter. sauté onion, bell pepper and celery. stir in flour and cook 1 minute. gradually whisk in stock, then milk.
  • 2 when mixture comes to a simmer, stir in peas, corn, parsley, dill and mustard. reduce heat and simmer 10 minutes. stir in lemon juice and tuna.
  • 3 scrape mixture into a baking dish and lay dough rounds on top. bake at 375 for about 15 minutes. let rest 5 minutes before serving.
