Stove Top Tomato And Bell Pepper Chicken

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 4 chicken quarters (thighs and legs)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup onion, chopped
  • 2 tablespoons garlic, chopped fine
  • 14 ounces chopped tomatoes (canned)
  • 1 red bell pepper, cut lengthwise in strips
  • 1 tablespoon dried oregano

Recipe

  • 1 add chicken to large frying pan. add olive oil, butter, onion and garlic to chicken. cook on medium/medium-hi heat for about 15 minutes until chicken is brown on both sides.
  • 2 add canned tomatoes, red bell pepper and oregano to chicken. turn heat to low, cover pan with lid and simmer for 30-45 minutes, turning chicken every 10-15 minutes.
  • 3 serve and enjoy!
