Stove Top Tomato And Bell Pepper Chicken

Ingredients
- 4 chicken quarters (thighs and legs)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 cup onion, chopped
- 2 tablespoons garlic, chopped fine
- 14 ounces chopped tomatoes (canned)
- 1 red bell pepper, cut lengthwise in strips
- 1 tablespoon dried oregano
Recipe
- 1 add chicken to large frying pan. add olive oil, butter, onion and garlic to chicken. cook on medium/medium-hi heat for about 15 minutes until chicken is brown on both sides.
- 2 add canned tomatoes, red bell pepper and oregano to chicken. turn heat to low, cover pan with lid and simmer for 30-45 minutes, turning chicken every 10-15 minutes.
- 3 serve and enjoy!
