Sunday Dinner Roast Chicken

Ingredients
- Servings: 6
- 1 (7 -8 lb) oven stuffer roasting chickens
- 1 large red onion, roughly chopped in 1 inch pieces
- 8 medium red potatoes, quartered
- 2 tablespoons ground rosemary
- 1 tablespoon onion powder
- 1 tablespoon butter
- 1/4 cup olive oil
- salt
- pepper
Recipe
- 1 preheat oven to 300 degrees.
- 2 clean chicken cavity and rinse thoroughly.
- 3 place in a large roasting pan.
- 4 place half of chopped onion inside the of the chicken, and other half around chicken as a bed.
- 5 add chopped potatoes to the bed around the chicken.
- 6 drizzle olive oil over chicken and vegetables.
- 7 season entire dish with rosemary, onion powder, salt and pepper.
- 8 rub herbs into the chicken, evenly coating and pushing some of it under the skin on the breast.
- 9 bake chicken for approximately 2 hours.
- 10 rub butter over skin of chicken and bake another few minutes or until chicken is done (perhaps another 1/2 hour).
