Teriyaki Chicken Skewers

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1/2 tablespoon water
  • 1/2 tablespoon cornstarch
  • 1/2 cup sugar
  • 1/2 cup soy sauce (lite is okay)
  • 1/4 cup cider vinegar
  • 1/4 cup crushed pineapple, squeezed dry
  • 1 garlic clove, minced
  • 1 teaspoon fresh ginger, minced
  • 1/4 teaspoon fresh ground black pepper
  • 4 bamboo skewers
  • 10 boneless skinless chicken thighs, cut into chunks

Recipe

  • 1 light the grill.
  • 2 bring all the sauce ingredients to a boil, cut down the heat, stir until it thickens.
  • 3 string the thigh pieces onto the skewers.
  • 4 place a sheet of aluminum foil on part of the grill to protect the bases of the skewers from burning.
  • 5 lay the skewers partially on the foil, with the meat over the coals.
  • 6 grill until almost done, then begin brushing the sauce on.
  • 7 serve with the extra sauce.
