Teriyaki Chicken Skewers

Ingredients
- Servings: 4
- 1/2 tablespoon water
- 1/2 tablespoon cornstarch
- 1/2 cup sugar
- 1/2 cup soy sauce (lite is okay)
- 1/4 cup cider vinegar
- 1/4 cup crushed pineapple, squeezed dry
- 1 garlic clove, minced
- 1 teaspoon fresh ginger, minced
- 1/4 teaspoon fresh ground black pepper
- 4 bamboo skewers
- 10 boneless skinless chicken thighs, cut into chunks
Recipe
- 1 light the grill.
- 2 bring all the sauce ingredients to a boil, cut down the heat, stir until it thickens.
- 3 string the thigh pieces onto the skewers.
- 4 place a sheet of aluminum foil on part of the grill to protect the bases of the skewers from burning.
- 5 lay the skewers partially on the foil, with the meat over the coals.
- 6 grill until almost done, then begin brushing the sauce on.
- 7 serve with the extra sauce.
