Texmex Chicken For Slow Cooker

Ingredients
- Servings: 6
- 6 boneless skinless chicken breasts or 6 boneless skinless chicken thighs
- 2 tablespoons taco seasoning
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons ground oregano
- 1 teaspoon salt
- 2 -3 garlic cloves
- 1 (10 ounce) can tomatoes and green chilies
- 1 1/2 cups corn (frozen or fresh)
- 1 (14 ounce) can black beans or 1 (14 ounce) can pinto beans, rinsed
- 2 cups chicken broth
- 3 cups cooked rice
- fresh cilantro, chopped
Recipe
- 1 place frozen chicken in bottom of slow cooker. you can use all breasts or all thighs or combination of both.
- 2 place all the dry seasonings and garlic in medium bowl.
- 3 add the tomatoes, beans, corn and chicken broth.
- 4 stir ingredients together. pour over chicken breasts in slow cooker.
- 5 cook 3-4 hours on high or 6-7 hours on low.
- 6 before serving, shred chicken and stir ingredients together.
- 7 serve over hot cooked rice and top with fresh chopped cilantro or a sprinkle of dry cilantro, shredded cheese and sour cream if desired.
