Texmex Chicken For Slow Cooker

Total Time: 3 hrs 15 mins Preparation Time: 15 mins Cook Time: 3 hrs

Ingredients

  • Servings: 6
  • 6 boneless skinless chicken breasts or 6 boneless skinless chicken thighs
  • 2 tablespoons taco seasoning
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons ground oregano
  • 1 teaspoon salt
  • 2 -3 garlic cloves
  • 1 (10 ounce) can tomatoes and green chilies
  • 1 1/2 cups corn (frozen or fresh)
  • 1 (14 ounce) can black beans or 1 (14 ounce) can pinto beans, rinsed
  • 2 cups chicken broth
  • 3 cups cooked rice
  • fresh cilantro, chopped

Recipe

  • 1 place frozen chicken in bottom of slow cooker. you can use all breasts or all thighs or combination of both.
  • 2 place all the dry seasonings and garlic in medium bowl.
  • 3 add the tomatoes, beans, corn and chicken broth.
  • 4 stir ingredients together. pour over chicken breasts in slow cooker.
  • 5 cook 3-4 hours on high or 6-7 hours on low.
  • 6 before serving, shred chicken and stir ingredients together.
  • 7 serve over hot cooked rice and top with fresh chopped cilantro or a sprinkle of dry cilantro, shredded cheese and sour cream if desired.
