Tink's Chicken & Tuna Salad Sandwiches

Ingredients

  • Servings: 4
  • 1/2 lb boneless skinless chicken breast, cooked and shredded
  • 1 (5 ounce) can albacore tuna in water, drained (or your preferred type)
  • 1/4 cup red pepper, diced
  • 1/2 cup celery, diced
  • 1/4 cup pecans, chopped
  • 6 dried apricots
  • 1/4 teaspoon sea salt (or regular table salt)
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon ground mustard
  • 1/8 teaspoon rosemary, crushed
  • 1 teaspoon lemon juice
  • 1/2 teaspoon apple cider vinegar
  • 3/4 cup mayonnaise (or more to taste)

Recipe

  • 1 combine all ingredients in medium sized bowl.
  • 2 use as a sandwich filler in croissants, rolls, baguettes, tortillas, or wheat bread. or simply wrap in a large lettuce leaf.
