Tink's Chicken & Tuna Salad Sandwiches

Ingredients
- Servings: 4
- 1/2 lb boneless skinless chicken breast, cooked and shredded
- 1 (5 ounce) can albacore tuna in water, drained (or your preferred type)
- 1/4 cup red pepper, diced
- 1/2 cup celery, diced
- 1/4 cup pecans, chopped
- 6 dried apricots
- 1/4 teaspoon sea salt (or regular table salt)
- 1/8 teaspoon garlic powder
- 1/8 teaspoon ground mustard
- 1/8 teaspoon rosemary, crushed
- 1 teaspoon lemon juice
- 1/2 teaspoon apple cider vinegar
- 3/4 cup mayonnaise (or more to taste)
Recipe
- 1 combine all ingredients in medium sized bowl.
- 2 use as a sandwich filler in croissants, rolls, baguettes, tortillas, or wheat bread. or simply wrap in a large lettuce leaf.
