Thai -style Chicken With Coriander Mango Salsa

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 tablespoons oil
  • 1 garlic clove, chopped
  • 1 teaspoon ginger, grated
  • 500 g chicken tenderloins, sliced
  • 1 tablespoon light soy sauce
  • 1/2 teaspoon light brown sugar or 1/2 teaspoon palm sugar
  • 2 tablespoons sweet chili sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 150 g hokkien noodles, fresh
  • 1/2 bunch chinese broccoli
  • 1 small red onion, finely chopped
  • 1/4 cup coriander
  • 200 g mangoes, finely diced
  • 2 tablespoons red wine vinegar

Recipe

  • 1 cook the garlic and ginger for 1 minute.
  • 2 add the chicken and brown for 4-5 minutes.
  • 3 add the sugar, soy,chilli and fish sauces and lime juice. simmer until the chicken is cooked.
  • 4 cook the noodles in boiling water until tender.
  • 5 drain, add to the pan ,along with the broccoli, and toss well.
  • 6 serve with the coriander mango salsa: combine all ingredients in a bowl and mix well.
