Thai -style Chicken With Coriander Mango Salsa

Ingredients
- Servings: 4
- 2 tablespoons oil
- 1 garlic clove, chopped
- 1 teaspoon ginger, grated
- 500 g chicken tenderloins, sliced
- 1 tablespoon light soy sauce
- 1/2 teaspoon light brown sugar or 1/2 teaspoon palm sugar
- 2 tablespoons sweet chili sauce
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 150 g hokkien noodles, fresh
- 1/2 bunch chinese broccoli
- 1 small red onion, finely chopped
- 1/4 cup coriander
- 200 g mangoes, finely diced
- 2 tablespoons red wine vinegar
Recipe
- 1 cook the garlic and ginger for 1 minute.
- 2 add the chicken and brown for 4-5 minutes.
- 3 add the sugar, soy,chilli and fish sauces and lime juice. simmer until the chicken is cooked.
- 4 cook the noodles in boiling water until tender.
- 5 drain, add to the pan ,along with the broccoli, and toss well.
- 6 serve with the coriander mango salsa: combine all ingredients in a bowl and mix well.
