Those Potatoes

Ingredients

- 5 tablespoons butter
- 5 tablespoons flour
- 2 cups light cream
- 2/3 cup chicken broth
- 5 tablespoons grated parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 lbs peeled diced cooked potatoes, peeled and diced
- 6 tablespoons crumbled roquefort cheese
- 1/2 teaspoon paprika
- 2 teaspoons butter
Recipe
- 1 preheat oven to 450 degrees.
- 2 in a saucepan, melt 5 tbsps butter.
- 3 add flour and cook over low heat, stirring, for 2 minutes.
- 4 remove pan from heat and gradually stir in cream and broth.
- 5 cook, stirring until sauce is thick and smooth.
- 6 stir in parmesan cheese, salt and pepper.
- 7 fold in potatoes.
- 8 add more salt and pepper to taste.
- 9 put in buttered casserole.
- 10 mix roquefort with melted butter and paprika.
- 11 sprinkle on top.
- 12 bake until cheese melts, 12-14 minutes.
