Those Potatoes

Total Time: 32 mins Preparation Time: 20 mins Cook Time: 12 mins

Ingredients

  • Servings: 4
  • 5 tablespoons butter
  • 5 tablespoons flour
  • 2 cups light cream
  • 2/3 cup chicken broth
  • 5 tablespoons grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 lbs peeled diced cooked potatoes, peeled and diced
  • 6 tablespoons crumbled roquefort cheese
  • 1/2 teaspoon paprika
  • 2 teaspoons butter

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 in a saucepan, melt 5 tbsps butter.
  • 3 add flour and cook over low heat, stirring, for 2 minutes.
  • 4 remove pan from heat and gradually stir in cream and broth.
  • 5 cook, stirring until sauce is thick and smooth.
  • 6 stir in parmesan cheese, salt and pepper.
  • 7 fold in potatoes.
  • 8 add more salt and pepper to taste.
  • 9 put in buttered casserole.
  • 10 mix roquefort with melted butter and paprika.
  • 11 sprinkle on top.
  • 12 bake until cheese melts, 12-14 minutes.
