Stuffed Chicken Breasts

Ingredients
- Servings: 4
- 4 boneless skinless chicken breasts
- 1/4 lb softened butter
- 1 tablespoon parsley
- 1 teaspoon oregano
- 3/4 teaspoon mrs. dash seasoning mix
- 1 cup mozzarella cheese
- oil (for frying)
Recipe
- 1 discard all of the fat and connecting tissue on the chicken breasts.
- 2 pound them to a thickness of about 1/8 inch.
- 3 set aside.
- 4 mix the parsley, oregano, mrs.
- 5 dash together.
- 6 whip the butter and then add the herbs.
- 7 take the chicken and lay them flat.
- 8 spread half of the butter mixture evenly between the four chicken breasts.
- 9 top the butter with cheese divided between all chicken.
- 10 roll the chicken breasts tightly around the cheese and butter.
- 11 place the chicken rolls into the oil and cook until lightly browned,about five minutes.
- 12 transfer them to a baking dish.
- 13 preheat the oven to 350 degrees.
- 14 melt the remaining butter and pour over the chicken rolls.
- 15 place in the oven and and bake about fifteen minutes.
- 16 basting them with the melted butter occasionaly.
- 17 pour the pan drippings over them when you serve.
