Tofu "chicken" Salad Sandwich

Ingredients

  • 1 lb firm tofu, drained and cubed
  • 1/2 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon paprika
  • 1/4 teaspoon turmeric
  • 1/3 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • whole wheat bread, slices or pita pocket
  • lettuce

Recipe

  • 1 mix mayo, mustard, paprika, and tumerik in a bowl.
  • 2 add celery, onions, and tofu. mix and be sure tofu is coated with mayo mixture. add a dash of pepper to season.
  • 3 serve on slices of whole wheat bread with lettuce or in pita pockets.
