Tofu "chicken" Salad Sandwich

Ingredients
- 1 lb firm tofu, drained and cubed
- 1/2 cup mayonnaise
- 1 tablespoon dijon mustard
- 1/4 teaspoon paprika
- 1/4 teaspoon turmeric
- 1/3 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- whole wheat bread, slices or pita pocket
- lettuce
Recipe
- 1 mix mayo, mustard, paprika, and tumerik in a bowl.
- 2 add celery, onions, and tofu. mix and be sure tofu is coated with mayo mixture. add a dash of pepper to season.
- 3 serve on slices of whole wheat bread with lettuce or in pita pockets.
