Toasted Coconut With Herbs Chicken

Ingredients

  • Servings: 2
  • 1/2 cup canned shredded coconut
  • 2 tablespoons fresh herbs, of your choice minced
  • salt, to taste
  • fresh ground pepper, to taste
  • 2 portions cooked chicken (from tutti-frutti teriyaki chicken recipe)

Recipe

  • 1 spread the coconut in a single layer in a microwave-safe pie plate and cook in a microwave oven at full power for 2 to 4 minutes until lightly toasted, starting at 2 minutes and adding additional 30 second intervals until the coconut is toasted.
  • 2 mix in herbs, and season with salt and pepper, if desired. scatter over chicken just before serving.
