Trim-the-tree Chicken Pitas

Ingredients
- Servings: 4
- 1 cup sliced fresh mushrooms
- 1 medium onion, chopped (1/2 cup)
- 8 ounces torn fresh spinach (6 cups)
- 1 tablespoon water
- 2 (6 ounce) boneless grilled chicken breast strips
- 1 cup shredded mozzarella cheese (4 ounces)
- 1/4 cup grated parmesan cheese
- 1/4 cup bottled caesar salad dressing
- 4 pita bread rounds, split
Recipe
- 1 coat a large skillet with nonstick spray. add mushrooms and onion. cook over medium heat 5 minutes. remove from heat. add spinach and the 1 tablespoon water to skillet. cover; cook 1 minute until spinach just wilts.
- 2 stir in the cooked chicken and heat through. add cheeses and salad dressing; toss. serve with pitas.
