Trim-the-tree Chicken Pitas

Total Time: 26 mins Preparation Time: 20 mins Cook Time: 6 mins

Ingredients

  • Servings: 4
  • 1 cup sliced fresh mushrooms
  • 1 medium onion, chopped (1/2 cup)
  • 8 ounces torn fresh spinach (6 cups)
  • 1 tablespoon water
  • 2 (6 ounce) boneless grilled chicken breast strips
  • 1 cup shredded mozzarella cheese (4 ounces)
  • 1/4 cup grated parmesan cheese
  • 1/4 cup bottled caesar salad dressing
  • 4 pita bread rounds, split

Recipe

  • 1 coat a large skillet with nonstick spray. add mushrooms and onion. cook over medium heat 5 minutes. remove from heat. add spinach and the 1 tablespoon water to skillet. cover; cook 1 minute until spinach just wilts.
  • 2 stir in the cooked chicken and heat through. add cheeses and salad dressing; toss. serve with pitas.
