Tuna Cobb Salad

Ingredients

  • Servings: 2
  • 4 cups torn green leaf lettuce
  • 2 medium tomatoes, chopped
  • 1 (6 ounce) can tuna, drained and flaked or 1 1/2 cups cut-up cooked chicken
  • 1 ripe avocado, peeled and diced
  • 2 hard-boiled eggs, chopped
  • 1/2 cup artichoke heart (marinated or unmarinated, your choice)
  • 2 tablespoons chopped green onions
  • 2 tablespoons bacon bits
  • 1/2 cup crouton (optional)
  • 1/2 cup ranch dressing (or your favorite dressing)

Recipe

  • 1 on two dinner plates, layer all ingredients except dressing.
  • 2 top with dressing.
  • 3 if desired, sprinkle over croutons, and season with salt and ground black pepper.
  • 4 enjoy!
