Spanish Paella

Ingredients

  • Servings: 4
  • 1 cup uncle ben's converted brand rice
  • 2 tablespoons olive oil
  • 1/2 cup onion, diced
  • 1/2 cup green bell pepper, diced
  • 2 boneless skinless chicken breast halves, cut into 1/2 inch strips
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 ounces smoked low-fat sausage
  • 1/2 lb shrimp, peeled & deveined
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon saffron (optional)
  • 1 1/2 cups diced tomatoes
  • 1 clove garlic, chopped

Recipe

  • 1 cook rice according to package instructions.
  • 2 while the rice is cooking, heat the oil in skillet and saute onions and peppers until crisp-tender.
  • 3 add the chicken and continue to saute until half cooked.
  • 4 add all ingredients except tomatoes and garlic.
  • 5 stir and cover.
  • 6 steam until the chicken and shrimp are fully cooked.
  • 7 stir in the tomatoes and garlic.
  • 8 when the rice is finished cooking, mix together and serve.
