Spanish Potatoes

Ingredients

- 1 lb small red potato, quartered
- 1 1/2 cups diced onions
- 1 cup diced green pepper
- 1/2 cup water
- 1 tablespoon olive oil
- 1 teaspoon chicken bouillon granule
- 1 cup chopped tomato
- 1/2 teaspoon dried oregano
Recipe
- 1 place potatoes in a saucepan and cover with water.
- 2 bring to a boil, reduce heat, cover and cook until tender.
- 3 in another pan, combine the onions, green pepper, water, oil and bouillon and bring to a boil.
- 4 reduce heat, cover and simmer until vegetables are tender.
- 5 drain potatoes and add onion mixture, tomatoes and oregano.
- 6 stir gently to coat.
