Spanish Potatoes

Ingredients

  • Servings: 6
  • 1 lb small red potato, quartered
  • 1 1/2 cups diced onions
  • 1 cup diced green pepper
  • 1/2 cup water
  • 1 tablespoon olive oil
  • 1 teaspoon chicken bouillon granule
  • 1 cup chopped tomato
  • 1/2 teaspoon dried oregano

Recipe

  • 1 place potatoes in a saucepan and cover with water.
  • 2 bring to a boil, reduce heat, cover and cook until tender.
  • 3 in another pan, combine the onions, green pepper, water, oil and bouillon and bring to a boil.
  • 4 reduce heat, cover and simmer until vegetables are tender.
  • 5 drain potatoes and add onion mixture, tomatoes and oregano.
  • 6 stir gently to coat.
