Spanish Lamb Chops And Rice

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 lbs lamb chops (4 chops approximately 1-inch thick)
  • 1 tablespoon olive oil
  • 2 onions, sliced
  • 1 green bell pepper, cut into chunks
  • 1 tomato, cut in wedges
  • 2 cloves garlic, minced
  • 1/2 teaspoon turmeric
  • 3/4 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon ground cumin
  • salt
  • 2/3 cup rice
  • 1 1/3 cups chicken stock
  • 1/3 cup pitted black olives, sliced
  • 2 tablespoons chopped fresh parsley

Recipe

  • 1 brown chops in oil over medium-high heat, about 8 minutes.
