Spanish Paella

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 cup long-grain rice
  • 2 tablespoons olive oil
  • 1/2 cup onion, diced
  • 1/2 cup green bell pepper, diced
  • 2 boneless skinless chicken breast halves, cut into 1/2 ", strips
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 ounces smoked sausage (polska kielbasa)
  • 1/2 lb shrimp, peeled and deveined
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon saffron (optional)
  • 1 1/2 cups tomatoes, diced
  • 1 garlic clove, chopped

Recipe

  • 1 cook rice.
  • 2 while rice is cooking, heat oil in skillet and saute the onions and pepper until tender.
  • 3 add chicken and continue to saute until chicken is about half cooked.
  • 4 add remaining ingredients except the tomatoes and garlic.
  • 5 stir and cover.
  • 6 simmer until chicken and shrimp are fully cooked.
  • 7 this will only take a few minutes.
  • 8 stir in the tomatoes and garlic.
  • 9 when the rice is fully cooked, mix together and serve.
