Rwandan Chicken

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 chicken, cut into pieces
  • 3 tablespoons oil
  • 1 onion, thinly sliced
  • 3 large tomatoes, mashed
  • 2 stalks celery, cut into thin rounds
  • 1 teaspoon salt
  • 1 hot chili pepper

Recipe

  • 1 fry the chicken in hot oil until golden.
  • 2 remove pieces and cook onions in the same pot. when they, too, are golden brown, return chicken pieces to the pot and add tomatoes, celery, salt and hot pepper.
  • 3 reduce heat and simmer until chicken is tender.
