Simply Roasted Chicken

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 (4 -5 lb) whole chickens
  • 1 teaspoon olive oil
  • kosher salt
  • fresh ground pepper

Recipe

  • 1 preheat oven to 400 degrees fahrenheit.
  • 2 wash chicken; pat inside and outside dry with paper towels.
  • 3 rub olive oil over breast, legs and wings.
  • 4 sprinkle with kosher salt and pepper.
  • 5 roast for 30 minutes; check to see that the chicken is not browning too fast. if it is getting too brown, cover with aluminum foil.
  • 6 continue roasting 30 more minutes, or until internal temperature reaches 170 degrees fahrenheit.
  • 7 let rest 10 minutes before carving or shredding.
