Tomato Sauced Lamb Chops

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 4 thick cut lamb chops
  • salt and black pepper
  • 1/4 cup flour (for dredging)
  • 1/2 cup chicken broth
  • 1/4 cup dry wine
  • 4 canned tomatoes, chopped
  • 1/2 teaspoon minced fresh rosemary
  • 1 tablespoon butter

Recipe

  • 1 heat 1 t butter and olive oil in large skillet over medium heat.
  • 2 generously sprinkle salt and pepper over lamb chops, then dredge in flour.
  • 3 increase heat to medium high and add lamb chops to skillet in one layer.
  • 4 cook chops until golden brown and cooked through.
  • 5 remove chops from skillet and keep warm.
  • 6 add chicken broth, wine, tomatoes and rosemary to skillet, scraping and whisking to dissolve browned bits.
  • 7 reduce liquid to 1/4 cup and quickly whisk in 1 more tablespoon of butter.
  • 8 taste to correct seasonings.
  • 9 spoon over lamb chops and serve immediately.
