Sweet & Smoky Paprika Chicken Chili-slow Cooker

Total Time: 4 hrs 30 mins Preparation Time: 30 mins Cook Time: 4 hrs

Ingredients

  • 10 dried red chilies (japenese chili pods)
  • 1 cup pitted prunes
  • 2 cups boiling water
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 1 1/2 teaspoons garlic, minced
  • 1 teaspoon smoked paprika
  • 3 tablespoons tomato paste
  • 2 (14 1/2 ounce) cans crushed fire-roasted tomatoes
  • 4 slices hickory smoked bacon, precooked, diced
  • 1 (9 ounce) package precooked chicken breasts, herb roasted, diced
  • 2 (15 ounce) cans red kidney beans
  • 1 teaspoon pepper
  • 2 teaspoons salt
  • 2 tablespoons mrs dash's extra spicy seasoning
  • 1/4 cup brown sugar

Recipe

  • 1 allow red chiles and prunes to steep in 2 cups boiling water for 15-20mins. strain and reserve water. set aside for future use.
  • 2 in medium sauce pan, sautee onion and minced garlic on low until tender. add smoked paprika and cook for 1-2mins.
  • 3 in a food processor, puree chiles, prunes, 1/2 the sauteed onion/garlic/paprika mixture, tomato paste and 1-14.5oz can crushed fire-roasted tomatoes.
  • 4 to crockpot add water reserve, onion reserve, puree, bacon, chicken, kidney beans, pepper, salt, extra spicy mrs. dash and brown sugar. stir; cook on high, 4 hours and enjoy w/pepperjack cheese, sourcream or cornbread!
