Tropical Chicken Salad With Orange Vinaigrette

Ingredients

  • Servings: 2
  • 2 tablespoons orange juice
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons olive oil
  • 1/4 teaspoon table salt
  • 1/4 teaspoon black pepper, freshly ground
  • 4 cups mixed baby greens
  • 5 ounces cooked chicken breasts, skinless boneless
  • 3/4 cup pineapple chunk, fresh, cut into chunks
  • 1 mango, fresh, cut into chunks
  • 1/2 cucumber, seedless, cut into chunks
  • 1/4 cup mint leaf, fresh, cut into thin strips
  • 1/4 cup red onion, thinly sliced

Recipe

  • 1 in a large bowl, stir together orange juice, vinegar, oil, salt and pepper until blended.
  • 2 add salad greens, chicken, pineapple, mango, cucumber, mint and onion; toss to mix and coat. serve immediately. yields about 3 cups per serving.
