Ingredients

- 2 tablespoons orange juice
- 1 tablespoon rice wine vinegar
- 2 teaspoons olive oil
- 1/4 teaspoon table salt
- 1/4 teaspoon black pepper, freshly ground
- 4 cups mixed baby greens
- 5 ounces cooked chicken breasts, skinless boneless
- 3/4 cup pineapple chunk, fresh, cut into chunks
- 1 mango, fresh, cut into chunks
- 1/2 cucumber, seedless, cut into chunks
- 1/4 cup mint leaf, fresh, cut into thin strips
- 1/4 cup red onion, thinly sliced
Recipe
- 1 in a large bowl, stir together orange juice, vinegar, oil, salt and pepper until blended.
