Tropical Chicken Salad

Ingredients

  • Servings: 6
  • 2 cups chicken, meat (cooked and cubed)
  • 2 apples, peeled and diced
  • 1 cup pineapple chunk
  • 1/3 cup almonds, chopped
  • 1/2 cup coconut, shredded
  • 1/4 cup raisins (optional)
  • 3 tablespoons chutney, chopped
  • 2 teaspoons curry powder
  • 3/4 cup mayonnaise

Recipe

  • 1 in a bowl, combine chutney, curry, and mayonnaise.
  • 2 combine all other ingredients in a separate bowl.
  • 3 stir curry, chutney, and mayonaisse mixture into the chicken mixture.
  • 4 serve on watercress or lettuce leaves, with slices of avocado.
