Tropical Chicken Salad
Ingredients
- Servings: 6
- 2 cups chicken, meat (cooked and cubed)
- 2 apples, peeled and diced
- 1 cup pineapple chunk
- 1/3 cup almonds, chopped
- 1/2 cup coconut, shredded
- 1/4 cup raisins (optional)
- 3 tablespoons chutney, chopped
- 2 teaspoons curry powder
- 3/4 cup mayonnaise
Recipe
- 1 in a bowl, combine chutney, curry, and mayonnaise.
- 2 combine all other ingredients in a separate bowl.
- 3 stir curry, chutney, and mayonaisse mixture into the chicken mixture.
- 4 serve on watercress or lettuce leaves, with slices of avocado.
