Tropical Chicken

Ingredients

• Servings: 4
• 1/4 cup rice wine vinegar
• 2 tablespoons olive oil
• 1/2 teaspoon salt
• 1 teaspoon minced garlic
• 1/2 teaspoon paprika
• 1 dash black pepper
• 1/4 cup orange marmalade
• 4 boneless skinless chicken breasts

Recipe

• 1 combine first 7 ingredients in a small bowl.
• 2 arrange chicken breasts on a rack on a deep cookie sheet.
• 3 generously brush chicken, both sides with mixture.
• 4 bake at 375 degrees for 25 minutes, turn baste again.
• 5 bake 10 minutes.
• 6 remove chicken from rack and place on cookie sheet, (the mixture will have browned and thickened on the sheet) brush the browned, thicken mixture on chicken, coating it well, and bake another ten minutes or til chicken is cooked through.
