Tropical Salsa

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 cups pineapple chunks (fresh pineapple is best but you can use canned)
  • 1 tomato, seeded and chopped
  • 1/2 red onion, chopped
  • 1/2 sweet red pepper, chopped
  • 1 red chili, seeds removed and chopped finely
  • 1 avocado (i like the salsa without the avocado) (optional)
  • 2 tablespoons cilantro, chopped
  • 1/2 teaspoon lime peel, shredded finely
  • 2 tablespoons lime juice
  • 1 garlic clove, minced
  • pepper (optional)
  • salt (optional)

Recipe

  • 1 chop the pineapple into chunks and prepare the tomato, onion, sweet pepper, chilli and avocado (optional ingredient). place them all into a mixing bowl.
  • 2 add the remaining ingredients and gently mix to combine.
  • 3 cover and chill until serving time.
  • 4 place on top of grilled or barbequed fish or chicken.
