Tropical Salsa

Ingredients
- Servings: 4
- 2 cups pineapple chunks (fresh pineapple is best but you can use canned)
- 1 tomato, seeded and chopped
- 1/2 red onion, chopped
- 1/2 sweet red pepper, chopped
- 1 red chili, seeds removed and chopped finely
- 1 avocado (i like the salsa without the avocado) (optional)
- 2 tablespoons cilantro, chopped
- 1/2 teaspoon lime peel, shredded finely
- 2 tablespoons lime juice
- 1 garlic clove, minced
- pepper (optional)
- salt (optional)
Recipe
- 1 chop the pineapple into chunks and prepare the tomato, onion, sweet pepper, chilli and avocado (optional ingredient). place them all into a mixing bowl.
- 2 add the remaining ingredients and gently mix to combine.
- 3 cover and chill until serving time.
- 4 place on top of grilled or barbequed fish or chicken.
