South Beach Diet Chicken With Parmesan-tomato Salsa

Ingredients

  • Servings: 4
  • 1 large tomato, chopped
  • 1/3 cup sliced green onion
  • 1 tablespoon balsamic vinegar
  • 1/4 cup grated parmesan cheese
  • 4 small boneless skinless chicken breast halves (4 oz. each)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Recipe

  • 1 combine tomatoes, onion, vinegar, and cheese; set aside.
  • 2 cook chicken in large nonstick skillet on medium-high heat 5 to 7 minutes on each side or until cooked through. sprinkle with salt and pepper.
  • 3 serve topped with the tomato mixture.
