- 1 leek, chopped
- 1 teaspoon minced garlic
- 1 1/2 cups chicken broth
- 1 (28 ounce) can plum tomatoes, drained (reserve liquid for another use)
- 1 cup quinoa
Recipe
- 1 coat pan with nonstick spray and brown leek and garlic. add remaining ingredients, bring to high pressure quickly, cook for 1 minute. let pressure fall on its own for 10 minutes before removing cover and serving.
