Slow Cooker Chicken Pozole

Ingredients

- 1 1/4 lbs boneless skinless chicken thighs, cut into 1 inch pieces
- 2 garlic cloves, finely chopped
- 2 (15 ounce) cans hominy, drained and rinsed
- 1 medium onion, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon cumin
- 1/4 teaspoon dried red pepper flakes
- 2 chicken bouillon cubes
- 4 cups water
- 1 (14 1/2 ounce) can diced tomatoes with green chilies (such as rotel)
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 combine chicken, garlic, hominy, onion, oregano, cumin, red pepper flakes, bouillon cubes and water in a slow cooker. cover and cook on high for 3 hours or on low for 5 hours.
- 2 remove cover and stir in tomatoes, lime juice, salt and pepper until warmed through. serve immediately.
