Slow Cooker Chicken Pozole

Total Time: 5 hrs 10 mins Preparation Time: 10 mins Cook Time: 5 hrs

Ingredients

  • Servings: 8
  • 1 1/4 lbs boneless skinless chicken thighs, cut into 1 inch pieces
  • 2 garlic cloves, finely chopped
  • 2 (15 ounce) cans hominy, drained and rinsed
  • 1 medium onion, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/4 teaspoon dried red pepper flakes
  • 2 chicken bouillon cubes
  • 4 cups water
  • 1 (14 1/2 ounce) can diced tomatoes with green chilies (such as rotel)
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 combine chicken, garlic, hominy, onion, oregano, cumin, red pepper flakes, bouillon cubes and water in a slow cooker. cover and cook on high for 3 hours or on low for 5 hours.
  • 2 remove cover and stir in tomatoes, lime juice, salt and pepper until warmed through. serve immediately.
