Speedy Lamb Cassoulet

Ingredients

  • Servings: 4
  • 3/4 lb lamb tenderloin (trimmed)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon olive oil
  • 1 onion (medium, chopped)
  • 3 garlic cloves (chopped)
  • 2 (19 ounce) cans beans (kidney or navy, drained and rinsed)
  • 3/4 cup chicken broth
  • 3/4 teaspoon rosemary (crushed)
  • 3/4 teaspoon thyme

Recipe

  • 1 cut lamb into 3/4 inch cubes. sprinkle with salt and pepper.
  • 2 heat oil in a large dutch ovem over medium high heat. add lamb; saute 5 minutes or until browned.
  • 3 add onion and garlic; saute 5 minutes.
  • 4 stir in beans and spices, and bring to a boil.
