Tender Lamb Tenderloin

Ingredients

- 1 (1 lb) whole lamb tenderloin
- 1 garlic clove, cut into slivers
- salt, to taste
- pepper, to taste
- 1/2 teaspoon ground cumin
- 2 tablespoons extra virgin olive oil
- 1/2 cup chicken broth
- 1/2 cup dry wine
Recipe
- 1 preheat oven to 400.
- 2 with the top of a sharp knife, make deep little slits all over the tenderloin and insert the garlic slivers.
- 3 season with salt, pepper and cumin.
- 4 place the oil in an oven-proof skillet and sear the tenderloin well over medium-high heat for about 10 minutes, turning the meat over as it browns.
- 5 add the chicken broth and wine to the pan, and place it in the oven for 10 minutes.
- 6 remove it and let it rest, covered with foil, for 10-12 minutes before carving. it will continue to cook as it sits.
- 7 slice and serve immediately.
