Suriname Chicken Curry

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 3 lbs chicken (cut into bite-sized pieces)
  • 2 garlic cloves (more, to taste)
  • 1 medium onion
  • 2 tablespoons masala (store-bought, your own recipe or quick garam masala or madras curry powder) or 2 tablespoons curry powder (store-bought, your own recipe or quick garam masala or madras curry powder)
  • 4 tablespoons sunflower oil or 4 tablespoons corn oil
  • chili peppers (optional) or jalapeno, to taste (optional)
  • 1/2 teaspoon sugar
  • salt, to taste
  • water

Recipe

  • 1 heat the oil; add the onion and garlic, fry until translucent (take care not to scorch)
  • 2 add the masala powder or curry powder and stir in well.
  • 3 add the chicken with the peppers, sugar and salt (to taste)
  • 4 stir well until chicken is coated with onion/garlic mixture; add just enough water to cover the chicken.
  • 5 cover and cook over medium heat until tender.
