Suriname Chicken Curry

Ingredients
- Servings: 4
- 3 lbs chicken (cut into bite-sized pieces)
- 2 garlic cloves (more, to taste)
- 1 medium onion
- 2 tablespoons masala (store-bought, your own recipe or quick garam masala or madras curry powder) or 2 tablespoons curry powder (store-bought, your own recipe or quick garam masala or madras curry powder)
- 4 tablespoons sunflower oil or 4 tablespoons corn oil
- chili peppers (optional) or jalapeno, to taste (optional)
- 1/2 teaspoon sugar
- salt, to taste
- water
Recipe
- 1 heat the oil; add the onion and garlic, fry until translucent (take care not to scorch)
- 2 add the masala powder or curry powder and stir in well.
- 3 add the chicken with the peppers, sugar and salt (to taste)
- 4 stir well until chicken is coated with onion/garlic mixture; add just enough water to cover the chicken.
- 5 cover and cook over medium heat until tender.
