Spiced Chicken And Sweet Potatoes

Ingredients

  • Servings: 6
  • 1 tablespoon caraway seed, crushed
  • 2 teaspoons dried oregano
  • 1 teaspoon cumin seed, crushed
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1 (3 lb) whole broiler-fryer chickens
  • 3 tablespoons olive oil
  • 4 medium sweet potatoes, peeled and sliced
  • 1 cup apple juice

Recipe

  • 1 in a small bowl, mix together the first 7 ingredients; set aside.
  • 2 place chicken, breast side up, on a rack in a shallow roasting pan.
  • 3 brush the chicken with 2 tablespoons olive oil.
  • 4 reserve 2 tablespoons rub mixture for later use.
  • 5 rub chicken with remaining rub mixture.
  • 6 roast chicken in a 375° oven for 20 minutes.
