Spiced Chicken And Sweet Potatoes

Ingredients

- 1 tablespoon caraway seed, crushed
- 2 teaspoons dried oregano
- 1 teaspoon cumin seed, crushed
- 1 teaspoon ground turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1 (3 lb) whole broiler-fryer chickens
- 3 tablespoons olive oil
- 4 medium sweet potatoes, peeled and sliced
- 1 cup apple juice
Recipe
- 1 in a small bowl, mix together the first 7 ingredients; set aside.
- 2 place chicken, breast side up, on a rack in a shallow roasting pan.
- 3 brush the chicken with 2 tablespoons olive oil.
- 4 reserve 2 tablespoons rub mixture for later use.
- 5 rub chicken with remaining rub mixture.
