Thai Style Pear & Chicken Salad

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 1
  • 1 pear, cut into wedges
  • 1 cucumber, sliced
  • 3 1/2 ounces chicken breasts, cooked and sliced
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon mint, chopped
  • 1 lime, juice of
  • 1 teaspoon honey
  • 1/4 teaspoon fish sauce
  • 1 garlic clove (optional)

Recipe

  • 1 combine the pear, cucumber, chicken, mint and coriander.
  • 2 mix together the lime juice, honey and fish sauce and garlic.
  • 3 pour the dressing over the salad, mix through and serve.
