Potato Tomato Scallop

Total Time: 1 hr 30 mins Preparation Time: 20 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 8
  • 1/2 cup onion, chopped
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup water
  • 1 cup tomato, chopped
  • 2 chicken bouillon cubes
  • 5 cups potatoes, pared and thinly sliced

Recipe

  • 1 cook onion in butter or margarine until transparent.
  • 2 blend in flour, paprika, salt and pepper.
  • 3 add water, tomatoes and bouillon cubes.
  • 4 cook until cubes dissolve and mixture thickens.
  • 5 place potatoes in greased 2 quart casserole; add sauce.
  • 6 cover and bake in preheated 400 degree f oven for 1 to 1 1/4 hours.
