Turkey Sausage Jambalaya

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 12 ounces turkey sausage, cut 1/4 inch thick
  • 12 ounces boneless chicken breasts, cut into 1-inch strips
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1 cup instant brown rice, uncooked
  • 1/2 cup chicken broth
  • 1 bunch green onion, diced
  • 2 garlic cloves, minced
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper

Recipe

  • 1 in a large skillet, heat sausage, garlic, and peppers until tender.
  • 2 add remaining ingredients (except for green onions) and heat to boiling.
  • 3 reduce heat to low, cover pan and simmer for 10 minutes or until rice is tender.
  • 4 remove from heat and stir in green onions before serving.
