Tuscan Style Chicken

Ingredients

- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 lb boneless skinless chicken breast
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (19 ounce) can cannellini beans, rinsed and drained
- 1/2 cup fat-free low-sodium chicken broth
- 6 sun-dried tomatoes packed in oil, drained,rinsed under water,patted dry,and chopped
- 2 tablespoons chopped fresh rosemary
Recipe
- 1 cook onion, and garlic in oil in a large skillet over medium-high heat until onion is tender, about 3 minutes.
- 2 meanwhile, cut chicken into 1 1/2 inch pieces.
- 3 sprinkle chicken with coriander, salt, and pepper.
- 4 add chicken to skillet and cook, stirring, for 1 minute.
- 5 stir in beans, broth, tomatoes, and rosemary; cover and simmer until chicken is cooked throgh, about 9-10 minutes more.
- 6 ladle into serving bowls, and serve.
