Tuscan Style Chicken

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lb boneless skinless chicken breast
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (19 ounce) can cannellini beans, rinsed and drained
  • 1/2 cup fat-free low-sodium chicken broth
  • 6 sun-dried tomatoes packed in oil, drained,rinsed under water,patted dry,and chopped
  • 2 tablespoons chopped fresh rosemary

Recipe

  • 1 cook onion, and garlic in oil in a large skillet over medium-high heat until onion is tender, about 3 minutes.
  • 2 meanwhile, cut chicken into 1 1/2 inch pieces.
  • 3 sprinkle chicken with coriander, salt, and pepper.
  • 4 add chicken to skillet and cook, stirring, for 1 minute.
  • 5 stir in beans, broth, tomatoes, and rosemary; cover and simmer until chicken is cooked throgh, about 9-10 minutes more.
  • 6 ladle into serving bowls, and serve.
