Sauteed Broccoli And Mushrooms

Ingredients
- 1 tablespoon olive oil
- 4 cups sliced mushrooms (about 1/2 lb.)
- 1/4 cup sliced shallot (about 1)
- 1/4 cup dry sherry
- 4 cups broccoli florets (about 1 bunch)
- 1/2 teaspoon salt
- 1/2 cup reduced-sodium fat-free chicken broth
- 1/4 teaspoon black pepper
Recipe
- 1 heat oil in a large skillet over medium-high heat.
- 2 add mushrooms and shallots to pan; saute 10 minutes or until mushrooms are lightly browned.
- 3 stir in sherry; cook 2 minutes or until liquid evaporates, stirring frequently.
- 4 add broccoli and salt to pan; stir well.
- 5 stir in broth; bring to a boil. cover and cook 5 minutes or until broccoli is crisp-tender.
- 6 stir in pepper.
