Sauteed Broccoli And Mushrooms

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 tablespoon olive oil
  • 4 cups sliced mushrooms (about 1/2 lb.)
  • 1/4 cup sliced shallot (about 1)
  • 1/4 cup dry sherry
  • 4 cups broccoli florets (about 1 bunch)
  • 1/2 teaspoon salt
  • 1/2 cup reduced-sodium fat-free chicken broth
  • 1/4 teaspoon black pepper

Recipe

  • 1 heat oil in a large skillet over medium-high heat.
  • 2 add mushrooms and shallots to pan; saute 10 minutes or until mushrooms are lightly browned.
  • 3 stir in sherry; cook 2 minutes or until liquid evaporates, stirring frequently.
  • 4 add broccoli and salt to pan; stir well.
  • 5 stir in broth; bring to a boil. cover and cook 5 minutes or until broccoli is crisp-tender.
  • 6 stir in pepper.
