Simple Spinach Manicotti

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1 egg
  • 1 lb frozen spinach, thawed and drained (6 minutes in microwave, then squoze in a kitchen towel)
  • 1/8 teaspoon ground nutmeg
  • 1 (6 ounce) can tomato paste
  • 1 1/4 cups chicken broth
  • 1 cup mushroom, sliced
  • 1 teaspoon italian seasoning
  • manicotti
  • extra mozzarella cheese (optional)

Recipe

  • 1 preheat oven to 350.
  • 2 boil manicotti shells.
  • 3 combine all cheese stuffing ingredients; stuff manicotti.
  • 4 combine all sauce ingredients (or use a couple of cups of your favorite spaghetti sauce) and pour over stuffed manicottis.
  • 5 cover with aluminum foil and bake for 30 minutes.
  • 6 top with extra mozzerella, if desired, uncover and bake for 10 more minutes.
