Simple Spinach Manicotti

Ingredients

- 1 cup ricotta cheese
- 1 cup mozzarella cheese
- 1/4 cup parmesan cheese
- 1 egg
- 1 lb frozen spinach, thawed and drained (6 minutes in microwave, then squoze in a kitchen towel)
- 1/8 teaspoon ground nutmeg
- 1 (6 ounce) can tomato paste
- 1 1/4 cups chicken broth
- 1 cup mushroom, sliced
- 1 teaspoon italian seasoning
- manicotti
- extra mozzarella cheese (optional)
Recipe
- 1 preheat oven to 350.
- 2 boil manicotti shells.
- 3 combine all cheese stuffing ingredients; stuff manicotti.
- 4 combine all sauce ingredients (or use a couple of cups of your favorite spaghetti sauce) and pour over stuffed manicottis.
- 5 cover with aluminum foil and bake for 30 minutes.
- 6 top with extra mozzerella, if desired, uncover and bake for 10 more minutes.
